Place

Lemon and lime belong to India’s remarkably diverse citrus-growing landscape, from northern and northeastern varieties such as Assam lemon to the acid-lime belts of western and southern India. Their bright acidity and fragrant peel provide a natural contrast to the richness of cacao.

Season

Citrus is enjoyed across the year in India, but its sharp, refreshing character feels particularly suited to spring and summer. In chocolate, lemon brings that same freshness into a richer format that works equally well as a light after-meal bite.

Make

Bright citrus notes are carefully paired with chocolate so that lemon lifts the cacao rather than overwhelming it. The combination moves between acidity, fragrance, sweetness and bitterness, creating a chocolate with a distinctly fresh finish.

Tradition

India has a long culinary relationship with citrus through nimbu pani, pickles, chutneys, preserves and everyday seasoning. Our Lemon Chocolate takes that familiar Indian instinct for using citrus to sharpen and balance food and applies it to cacao.
