Gulqand has been an intrinsic part of the households in the Indian subcontinent. It is the perfect grandma’s recipe to beat the heat !
The best characteristic about Gulqand is that when kept in a cool dark place, or in a refrigerator; it can stay unblemished for years. One can savour it in all seasons, and its sweet texture never lets you down.
We at ‘Heritage on My Plate’ make our own Gulqand, arduously sun dried for a period of 29 days and can assure you, just one teaspoonful of Gulqand will forever change the way you look at roses! We make it with Raw Sugar.
Gulqand belongs to the culinary landscape of the Indian subcontinent, built around fragrant rose petals and sugar. Its very name carries a linguistic journey: gul refers to rose and qand to sweetness or sugar, reflecting Persian influence on the food vocabulary of the subcontinent.
With its floral character, Gulqand has traditionally been particularly associated with spring and the Indian summer. In Unani tradition, it has also been regarded as a cooling preparation, helping explain its enduring place in warm-weather food culture.
Fragrant rose petals are layered and preserved with sweetness until they soften into a rich, aromatic rose preserve. It is a beautifully simple transformation: flower, sweetness and time creating an intensely perfumed relish.
Gulqand sits at the meeting point of Indian, Persian and Unani culinary traditions. Rose preserves have travelled through courtly kitchens, household pantries and the culture of paan, becoming one of the subcontinent’s most recognisable floral foods.
Spoon Gulqand over yoghurt or ice cream, blend it into milk, layer it into desserts, add it to breakfast bowls, or simply enjoy a little after a meal. Rose petals contain naturally occurring plant compounds, but for us the greater appeal is simpler: Gulqand preserves one of India’s most evocative traditional flavours for the contemporary table.
