Our hero ingredient takes us to the high-altitude orchards of Ladakh, where apricots are integral to the region’s agricultural and cultural landscape. Ladakh’s celebrated local cultivars include Raktsey Karpo and Halman, nurtured by the region’s distinctive high-altitude conditions.
Apricot blossom announces spring in Ladakh, while the fruit belongs to the region’s short summer growing and harvest season. Turning apricots into chutneys and other preserves allows the flavour of a brief Himalayan harvest to travel far beyond its season.
Apricots are slowly cooked into a sweet-tart chutney, allowing the fruit’s natural acidity and mellow sweetness to work with carefully balanced spices. The objective is not to overpower the apricot, but to preserve its fruity character in a versatile condiment.
In Ladakh’s cold-arid landscape, where the cropping season lasts only around four to five months, apricot has long been an important local fruit. Today, the region continues to celebrate apricot-based foods as part of its living agricultural heritage, with the Raktsey Karpo apricot carrying a GI tag.
Pair Apricot Chutney with Indian breads, grilled paneer, cheese, crackers and roast vegetables, or use it as a glaze and sandwich spread. Apricots naturally provide carotenoids and other plant compounds, while their sweet-tart flavour makes this an easy bridge between the traditional Indian chutney and the modern table.
